When we hear the word semolina, we immediately imagine the fluid porridge, and sometimes we also think about the lumps in it. Because of this peculiarity, many people have never liked this porridge since the very childhood.

So, we offer you a recipe instructing you how to cook semolina gnocchi – a traditional Italian dessert.

Here are the ingredients you need to make semolina gnocchi:

  • 100 g semolina,
  • 250 ml milk,
  • 2 tablespoons sugar,
  • 1 egg,
  • 50 g water,
  • 4 tablespoons sunflower or sesame oil,
  • Salt to taste
  • Breadcrumbs or coconut chips,
  • Jam, berries, and cream to serve.

Here is a step by step instruction how to cook semolina gnocchi

First, we cook semolina.

  1. Add sugar and salt to milk, put it on low heat, and bring to a boil.
  2. Slowly pour the semolina grits into the boiling milk, stirring it all the time.
  3. Cook 5 to 10 minutes until thick.
  4. Remove the porridge from the stove and let it cool down to a temperature of 40 or 50 oC.

IMPORTANT! To avoid the infamous lumps in the porridge, the cereal should be poured into boiling milk very slowly, and it is necessary to stir the porridge all the time while cooking.

Making the base for semolina gnocchi:

  1. Add one egg into the chilled semolina and mix everything thoroughly.
  2. Using the resulting mass, roll out long cylinders of 2 to 3 cm thick and push them a little bit down from above to make them slightly flat.
  3. Cut the cylinders into 2 cm long pieces with a knife.
  4. Roll every single gnocco in breadcrumbs or coconut chips and spread them on a heated frying pan with hot oil.
  5. Fry gnocchi on both sides for 2 to 3 minutes.

How to prepare berry sauce

To prepare the berry sauce, take half a glass of fresh or thawed raspberries, currants, or blueberries and 1 tablespoonful of sugar.

  1. Blend berries until smooth.
  2. Pour into a saucepan and mix the mass with sugar.
  3. Put the sauce on the fire and bring it to a boil.
  4. Remove from heat and cool down.
  5. Pour gnocchi with the sauce before serving.

A life hack! To save time while preparing this dessert, make the sauce while the porridge cools down. Then, by the time you start making and frying the gnocchi, you will have everything ready to quickly serve them.

The total cooking time for this dessert is 30 minutes.

Traditionally, semolina gnocchi are served on a pre-warmed plate, garnished with a jam or berry sauce. You can also use honey or maple syrup as a topping, and garnish the dish with a mint sprig on top.
